Owner Brooke Martin spent 11 years living in Austin, Texas before moving to Flowery Branch in 2011, and when she could not find barbecue in the area that matched what she had left behind, she decided to build it herself. The meats are rubbed with nothing but sea salt and coarse ground black pepper and smoked hot and fast daily in a Texas-made J&R Oyler smoker fired with oak wood. The result is brisket with a deep peppery bark, a vivid pink smoke ring, and a tenderness that has converted countless Georgia barbecue loyalists to the Central Texas way.
